Brie Egg and Spinach Sandwich 

Ingredients 
1 egg 
handful of spinach 
Brie 
Bread roll (gluten free) 
     I used schar kaisershimmel bread(the round one) and Schar Ciabatta (the rectangle one) 
olive oil 

The Brie: from a pop up shop in the markthal in Rotterdam



Bake the Gluten Free bread according to the baking directions on the bag 
 Heat olive oil in skillet

 Saute spinach until wilted 
Set spinach aside
While spinach is cooking, spread brie on the fresh out of the oven bread
Place back in oven so that the brie melts a bit more
While the bread is in the oven  cook the eggs
i cooked mine with yolk still runny which ended up spilling everywhere 
Place the cooked egg on top of the brie and the spinach on top of that 
ta-da!

Day 6 workouts

Day 6 of tireless workouts

Today once again going to the gym, this time to just work on machines. I couldn't imagine doing spinning twice in one week. But maybe one day it'll happen.

today i did 20min of cardio on the treadmill : -237 Kcal 
another 40 min of weight training

Welcome to Meat Free and Gluten Free
This is where I will document (as much as possible) by journey through being a vegetarian as well as gluten free. I'll include workouts and meal plans so that anybody else who wants to make the journey can. 
Living gluten free and vegetarian isn't easy. Vegetarian substitutes mainly have traces of gluten or some kind of gluten by product in them so those are normally out of the question. My diet normally consists of fruits and veggies and sometimes gluten free alternatives to pizza crust, pasta or whatever else i can find in the slim pickings of gluten free options at my local grocery store.
